At todays price of calves I feel there is room to butcher baby beef as we did 30 yr ago and I feel there would be a market for it.
The way I figure is it would be economical and it sure would reduce the amount of beef on the market.
Mabey there are some pork plants that could handle say 600# calves and if not they would not have to hang calves as long before going to the consumer and with this down sizing of servings thier may be an oportunity for restraunt trade.
Just a thought what do you think.
