Bison productio/marketing

I know this is a beef section, but it seems everyone visits this section the most and i'd like to know a few ideas and thoughts. im a young energetic farmer/custom operator going to school and learning new ideas with all this value adding themes and what not. I took a bison farm tour the other week and was really inspired in what one could do with that industry. I would love to hear some feedback on marketing "canadian bison" not just with the meat but other by-products that this animal offers and new cfia/eu approved packing plants in canada coming up. i just think its all very interesting and new ideas could always benefit.
