How do other peas, greens or maple for instance compare with profit, demand, harvest ease, and yield of yellow. What are some variety names that have worked for you.

In this area greens yield much the same as yellows . Many areas claim yellows still out yield greens . Never been the case here.
Stand every bit as good as yellows but seem to be more sensitive to root rot from experience here.
We used to grow both .
No experience with maples , neighbours grow some and seem to do good
Dunn peas seem to be growing in acreage here.
But if fusarium or aphenomices root rot is bad , no peas are good .

I like Dun peas
They are durable and high yielding and they stand up like they have Viagra In their genetics.
Price most times for Dun Peas is better than yellow peas.
They handle the weather well.

The variety that we grow is the CDC Dakota Dun pea.
Have been growing them for 8+ years now.
They out yielded our CDC Inca yellow peas in 2019.

Acer fall down with any reasonable crop size. Mosaic and Blazer maples are much better.
