Are they engineered to bear that weight. What is the bulk density of wheat versus liquid fert.

Stainless tank(s) is the way to go. They are priced similar or even less then poly. Having the ability to take advantage of early pricing/delivery discounts makes it at least the same price as AA or Urea.
I don't think resale is an issue. A few years ago I was looking for some more storage and followed a couple different SS tanks at auctions. They all went for close to new price. So we just bought new tanks.
