Do you even know the details of what a proof of vax certificate will look like? It wont cost a lot. The QR code system is for quicker processing to reduce waiting times in line.

If you are worried about privacy and tracking do you use a smart phone, the internet or a credit card? Because if you do you have already given up a lot of privacy and are tracked 24/7.
