Looking for general information on CO2 levels and humidity/temperature levels recommended for controlled storage warehouses. Especially storage for Russet Burbank potatoes to achieve/maintain sugar levels.

I would like to thank you for your replies. The Alberta site was helpfull however it does not give specific levels for temperature and CO2. We are located in P.E.I. and are not growing for a processor. We pack and ship product in count cartons for the fresh cut fry market in Canada. Anyone who may have some experience in this area may be able to offer some personal insights. We have read a lot about the sugar levels in potatoes but it does not seem to get to the required detail. we are able to achieve low levels with proper growing techniques in the neighbourhood of 2 - 4.5 Millimoles. It is the maintaining of these levels over longer periods which are the main concern. We have ventillated storage buildings with a plenum system as opposed to a culvert system so we are able to accurately control temperature and humidity.
