Pea processing all the rage

Now there is a new pea processing plant being set up in PEI in all places. Poor PEI is so desperate for any economic activity that they are pumping tax money in a pea processing plant at an old Old Dutch potato chip factory on the island. I ask how on earth does it make any sense to produce peas in a climate that will grow soybeans? Just produce soy. Nothing happens in Canuckistan without pork.
